Ingredients:
- 2 large sweet potatoes, peeled and diced
- 1 cup raw cashews, soaked in water for 4 hours or overnight, drained
- 1/4 cup nutritional yeast
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder
- Salt to taste
- 1/2 cup water, plus more if needed
Instructions:
Steam the sweet potatoes in a pot until they are soft enough to pierce with a fork
Soak cashews, add nutritional yeast, lemon juice, minced garlic, onion powder, smoked paprika, turmeric, chili powder, salt, and water to a blender
Blend until smooth
If you need to, add more water to get the consistency you want
Blend until smooth and creamy
Put the mixture in a saucepan
Heat it over medium-low heat while stirring it all the time
Warm it up and use it as a dip or to cover nachos
