Ultimate Vegan Victoria Sponge

This recipe for Vegan Victoria Sponge has the same taste and texture as the original, but it doesnt use any animal products. It is a delicious treat that is great for any event.

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup almond milk
  • 1/2 cup vegetable oil
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon apple cider vinegar
  • Vegan buttercream or jam for filling

Instructions:

Warm the oven up to 175F 350C

Prepare two 8-inch round cake pans by greasing them and lining them with parchment paper

Whisk the flour, sugar, and baking powder together in a bowl

Put almond milk, vegetable oil, vanilla extract, and apple cider vinegar in a different bowl and mix them together

Mix the dry and wet ingredients together until a smooth batter forms

Spread the batter out evenly in the cake pans that have been prepared

Put it in the oven and bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean

Let cakes cool for 10 minutes in their pans, then move them to wire racks to cool all the way down

When the first cake layer is cool, put vegan buttercream or jam on top of it

Then, put the second cake layer on top of it

If you want, you can sprinkle powdered sugar on top

Cut and serve
