Ingredients:
- 1 large low-carb tortilla
- 1 can of tuna, drained
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon mayonnaise
- 1 tablespoon diced red onion
- 1 tablespoon diced jalapeno optional
- 1 tablespoon chopped cilantro
- 1/2 tablespoon olive oil
Instructions:
Dice the red onion, jalapeno, and cilantro and put them in a bowl
Add the drained tuna and mix it with the mayonnaise
Cover half of the low-carb tortilla with the tuna mixture
Add shredded mozzarella cheese on top of the tuna mix
Cover the filling with half of the tortilla and gently press the edges together to seal
Set a pan on medium heat and add the olive oil
Carefully move the quesadilla to the pan and cook for two to three minutes on each side, until the cheese melts and the tortilla is golden brown
Take it out of the pan, cut it into wedges, and serve it hot
