Ingredients:
- 2 boneless, skinless chicken breasts
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 4 slices of cheddar cheese
- 4 slices of bacon, cooked crisp
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup sliced pickled jalapeos
- 4 slices of crusty bread
- 2 tablespoons mayonnaise
- 2 tablespoons olive oil
Instructions:
Chili powder, cumin, salt, and pepper should be used to season chicken breasts
In a pan, heat the olive oil over medium-high heat
For every side, cook the chicken for about seven to eight minutes, or until its fully cooked
Take it off and wait five minutes
On one side of each piece of bread, spread mayonnaise
After cooking the chicken breast, place two slices of bacon, diced tomatoes, diced red onion, and pickled jalapeos on the other side of the bread
Add another piece of cheddar cheese and a second piece of bread, mayo side down
In a skillet or pan, heat the oil over medium heat
Spread the sandwiches out on the pan or press and cook them for three to four minutes on each side, until they are golden brown and the cheese melts
Cut in half across the middle and serve hot
