This Cranberry Pork Loin in the Slow Cooker is a great fall dinner recipe. When you mix sour cranberries with sweet brown sugar and salty pork, you get a tasty and comforting meal.
Ingredients:
- 1 pork loin roast about 3-4 pounds
- 1 cup dried cranberries
- 1 cup cranberry juice
- 1/2 cup brown sugar
- 1/4 cup balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
Place the pork loin roast in the slow cooker
In a bowl, mix together the dried cranberries, cranberry juice, brown sugar, balsamic vinegar, garlic, thyme, salt, and pepper
Pour the cranberry mixture over the pork loin
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the pork is tender and cooked through
Once cooked, remove the pork from the slow cooker and let it rest for a few minutes before slicing
